Sourdough at Home: A Beginner’s Guide from Neighbors Mercantile

There’s something special about sourdough. The smell of a loaf baking in the oven, the crackle of a golden crust, the tangy flavor that only time and fermentation can create—it’s bread the way it was meant to be.

At Neighbors Mercantile, we believe sourdough isn’t just food. It’s a craft, a rhythm, and a connection to simpler, slower living. Whether you’re brand new or ready to try again, this guide will walk you through the why, the how, and the what you need to get started.

Why Sourdough? The Benefits

Sourdough is more than a trend—it’s one of the oldest forms of bread making. And it comes with real benefits:

1. Easier to Digest

The long fermentation process breaks down gluten and phytic acid, which can make nutrients more bioavailable and gentler on the stomach compared to conventional bread.

2. Better Blood Sugar Response

Sourdough has a lower glycemic impact than many commercial breads, meaning it won’t spike blood sugar as quickly.

3. Natural Fermentation = No Commercial Yeast

Wild yeast and beneficial bacteria do the work—no additives, preservatives, or shortcuts.

4. Flavor You Can’t Fake

Slow fermentation creates that signature tang, chewy crumb, and crisp crust.

Why People Avoid Making Sourdough (and Why You Shouldn’t)

Let’s be honest—sourdough has a reputation:

❌ “It’s too hard.”

❌ “It takes too long.”

❌ “I’ll kill the starter.”

Here’s the truth:

Sourdough is more about rhythm than perfection

Your starter is more resilient than you think

Once you learn the flow, it becomes second nature

Most people don’t quit because it’s difficult—they quit because they don’t have a simple process to follow. That’s what we’re here for.

Common Sourdough Mistakes (and How to Fix Them)

1. Starter Isn’t Active

Problem: No bubbles, no rise

Fix: Feed consistently, keep warm (around 70–78°F), and be patient. Starters often take 5–10 days to fully develop.

2. Dense, Flat Loaf

Problem: Under-fermented dough

Fix: Let it bulk ferment longer. Look for dough that’s puffy and airy, not just “time on a clock.”

3. Dough Too Sticky to Handle

Problem: Hydration too high for your skill level

Fix: Start with slightly lower water, or use a bench scraper for easier handling.

4. Burning the Bottom

Problem: Oven or Dutch oven too hot

Fix: Place a sheet pan under your Dutch oven or lower the bake temperature slightly.

5. Forgetting to Feed the Starter

Problem: Life happens

Fix: Store it in the fridge and feed weekly instead of daily.

What You Need to Get Started

You don’t need a bakery—just a few quality tools that make the process easier and more enjoyable.

Here are some favorites we carry at Neighbors Mercantile:

A sourdough starter (or the supplies to make your own)

A banneton proofing basket for beautiful shape and structure

A bread lame for scoring

A bench scraper for handling dough

A kitchen scale for consistent results

Our sourdough collection includes thoughtfully selected tools designed to help home bakers succeed from their very first loaf. Many of these items—like bannetons, dough scrapers, and lames—are included in sourdough kits that make getting started simple and approachable.

50g flour

How to Feed Your Starter

Countertop (daily baking):

Feed every 24 hours.

Fridge (weekly baking):

Feed once a week.

Take it out, feed, let it get active, bake, then return to the fridge.

Rule of thumb:

Equal parts starter, flour, and water by weight.

Your First Sourdough Loaf

If you’re ready to bake your first loaf, we’ve made it easy. At Neighbors Mercantile, we created a printable sourdough recipe card straight from the kitchen of Morgan Miller, a member of the Miller family—the owners of Neighbors Mercantile.

Morgan graciously welcomed us into her home and allowed us to observe her baking a fresh loaf of artisan sourdough bread while sharing some of her favorite sourdough tips and techniques. Watching the process firsthand—from shaping the dough to pulling that beautiful golden loaf out of the oven—was truly inspiring. And we have to admit… the smell of fresh sourdough baking was almost too distracting.

During our visit, Morgan walked us through the small details that make a big difference in sourdough baking, and we turned those notes into a simple, beginner-friendly printable recipe card you can keep right in your kitchen.

Inside the recipe card you’ll find:
